Follow this simple recipe to make a crunchy, sweet, and salty Toffee Chex Mix perfect for parties or holiday sharing.

  • 12 cups Chex cereal (rice, corn, or wheat mix)
  • 1 cup pretzel twists
  • 1 cup pecans or other nuts (optional)
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and nuts (if using). Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils.
  4. Once boiling, continue to cook for exactly 1 minute without stirring. Remove the pan from the heat immediately.
  5. Stir in the vanilla extract and baking soda quickly; the mixture will foam up.
  6. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir with a large spatula until the cereal is completely coated.
  7. Spread the coated cereal mixture onto the prepared baking sheets in a single layer.
  8. Bake for 30 minutes, stirring gently every 10 minutes to prevent burning and ensure even coating.
  9. Remove from the oven and immediately sprinkle the chocolate chips (if using) over the warm mix. Let it sit for 5 minutes until the chips soften.
  10. Gently stir the chocolate chips into the mix until they are distributed.
  11. Let the mix cool completely on the sheets until the toffee hardens and becomes crunchy. Break into pieces before serving or storing.

Notes

  • For extra saltiness, add 1/2 teaspoon of coarse salt over the mix right after it comes out of the oven.
  • Store the cooled mix in an airtight container at room temperature for up to one week.
  • You can substitute pecans with dry roasted peanuts or other favorite nuts.
