Tofu 'Chicken' Nuggets with Vegan Ranch (Kids Won’t Notice!)

Make delicious tofu ‘chicken’ nuggets that are so good, your kids won’t even know they’re vegan! Served with a creamy vegan ranch dip, these nuggets are a hit for the whole family.

  • 1 (14 ounce) block extra-firm tofu, pressed
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Batter:
  • 1 cup all-purpose flour
  • 1 cup unsweetened plant-based milk
  • 1 tablespoon cornstarch
  • 1 teaspoon apple cider vinegar
  • For the Breading:
  • 1 cup panko breadcrumbs
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • For the Vegan Ranch:
  • 1 cup raw cashews, soaked for at least 4 hours or overnight
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. Press the tofu to remove as much water as possible. Cut the pressed tofu into nugget-sized pieces.
  2. In a bowl, toss the tofu nuggets with nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Prepare the batter: In a shallow dish, whisk together flour, plant-based milk, cornstarch, apple cider vinegar, garlic powder, and onion powder until smooth.
  4. Prepare the breading: In another shallow dish, combine panko breadcrumbs, nutritional yeast, garlic powder, and dried parsley.
  5. Dip each tofu nugget first into the batter, ensuring it’s fully coated, then dredge it in the breadcrumb mixture, pressing gently to adhere.
  6. Heat about 1/2 inch of oil in a large skillet over medium-high heat.
  7. Fry the nuggets in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Drain on a wire rack lined with paper towels.
  8. Prepare the vegan ranch: Drain the soaked cashews and add them to a blender with water, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Blend until completely smooth and creamy.
  9. Serve the tofu ‘chicken’ nuggets hot with the vegan ranch dip.

Notes

  • For best results, press the tofu for at least 30 minutes.
  • You can bake the nuggets at 400°F (200°C) for 20-25 minutes, flipping halfway, if you prefer not to fry them.
  • Adjust seasonings in the ranch dip to your preference.
