Whip up a delicious and quick Tofu Stir-Fry with Peanut Sauce in just 15 minutes. This plant-based dish is packed with protein and flavor, making it a perfect weeknight meal.

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, pressed and cubed
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 2 cups mixed stir-fry vegetables (e.g., broccoli florets, sliced bell peppers, snow peas)
  • 1 tbsp vegetable oil
  • Optional garnishes: chopped peanuts, sesame seeds, sliced green onions

Instructions

  1. In a bowl, toss the tofu cubes with soy sauce and cornstarch until evenly coated.
  2. In a separate small bowl, whisk together peanut butter, rice vinegar, honey or maple syrup, sesame oil, grated ginger, and minced garlic. Add 1-2 tablespoons of water if needed to reach your desired sauce consistency.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the coated tofu and stir-fry for 5-7 minutes, or until golden brown and slightly crispy.
  5. Add the mixed vegetables to the skillet and stir-fry for another 3-5 minutes until tender-crisp.
  6. Pour the peanut sauce over the tofu and vegetables. Toss to coat everything evenly.
  7. Cook for 1-2 minutes more until the sauce has thickened slightly.
  8. Serve immediately, garnished with chopped peanuts, sesame seeds, and sliced green onions if desired.

Notes

  • For extra crispy tofu, bake or air fry the coated tofu cubes before adding them to the stir-fry.
  • Feel free to customize the vegetables based on what you have on hand.
  • Adjust the sweetness and tanginess of the peanut sauce to your preference.
