1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
2 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh basil leaves, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Stir in crushed tomatoes, vegetable broth, salt, and pepper. Bring to a simmer.
Reduce heat and let simmer for 10 minutes, stirring occasionally.
Stir in fresh basil just before serving.
Notes
For a creamier soup, stir in 1/4 cup of heavy cream or coconut milk at the end.
Add a pinch of red pepper flakes for a little heat.
