Make a rich and velvety tomato bisque by roasting fresh tomatoes and basil before blending. This recipe yields a comforting, homemade soup perfect for pairing with grilled cheese.

  • 2 lbs ripe tomatoes, halved
  • 1 large yellow onion, quartered
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1/4 cup fresh basil leaves, packed
  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the halved tomatoes, onion quarters, and unpeeled garlic cloves with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 30 to 35 minutes, until the tomatoes are slightly caramelized and soft.
  4. Remove the garlic skins; they should slide out easily.
  5. Transfer the roasted vegetables (tomatoes, onion, and peeled garlic) to a large pot or Dutch oven.
  6. Add the vegetable broth to the pot. Bring the mixture to a simmer over medium heat.
  7. Remove the pot from the heat. Use an immersion blender or carefully transfer the mixture in batches to a standard blender. Blend until completely smooth and velvety.
  8. Return the blended soup to the pot over low heat. Stir in the heavy cream and fresh basil leaves. Heat through gently; do not boil after adding cream.
  9. Taste the soup and add the optional sugar if the tomatoes are too acidic.
  10. Serve hot, garnished with extra basil if desired.

Notes

  • For a dairy-free version, substitute the heavy cream with full-fat canned coconut milk.
  • Roasting the vegetables deepens the flavor significantly compared to using raw ingredients.
  • This soup pairs perfectly with a classic grilled cheese sandwich for dipping.
