Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cup unsweetened cocoa powder
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 medium)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chunks
  • 1/2 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, baking powder, and cocoa powder.
  3. In a separate bowl, whisk together the granulated sugar, eggs, vegetable oil, unsweetened applesauce, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini, semi-sweet chocolate chips, milk chocolate chunks, and dark chocolate chunks.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure your zucchini is well-drained after grating to avoid excess moisture.
  • You can substitute other types of chocolate chips or chunks for your preference.
  • For an even richer chocolate flavor, you can add a tablespoon of instant espresso powder to the dry ingredients.
