A comforting and easy tuna rice casserole, perfect for a weeknight meal. This recipe swaps noodles for rice, combining flaky tuna, creamy sauce, and vegetables with a cheesy topping.

  • 1 (6 ounce) can tuna, drained and flaked
  • 3 cups cooked rice
  • 1 cup condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup frozen peas
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the drained tuna, cooked rice, cream of mushroom soup, milk, chopped onion, chopped celery, and frozen peas.
  3. Season with salt and pepper to your preference.
  4. Stir well until all ingredients are evenly mixed.
  5. Pour the mixture into a lightly greased 8×8 inch baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Let it stand for a few minutes before serving.

Notes

  • For a richer flavor, you can add a tablespoon of Dijon mustard to the mixture.
  • Feel free to add other vegetables like corn or diced carrots.
  • If you don’t have cream of mushroom soup, cream of celery or cream of chicken soup can be used as substitutes.
