A quick recipe for cooking tuna steaks to a medium-rare finish by searing them on the stovetop.

- 2 (6 ounce) tuna steaks, about 1 inch thick
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sesame seeds (optional)
- Pat the tuna steaks dry with paper towels.
- Season both sides of the steaks evenly with salt and pepper. If using, press sesame seeds onto the sides of the steaks.
- Heat the olive oil in a heavy skillet, such as cast iron, over medium-high heat until the oil shimmers.
- Carefully place the tuna steaks in the hot skillet.
- Sear for 1.5 to 2 minutes per side for rare to medium-rare. Adjust time slightly for desired doneness.
- Remove the steaks from the skillet immediately.
- Let the steaks rest for 3 minutes before slicing or serving.
Notes
- For best results, use sushi-grade or high-quality ahi tuna steaks.
- You can substitute avocado oil for olive oil if you prefer a higher smoke point.
- Serve with a side of soy sauce or a squeeze of fresh lemon juice.
