4 bell peppers
1 can (5 ounces) tuna, drained
1/4 cup mayonnaise
2 tablespoons chopped celery
1 tablespoon chopped onion
1 tablespoon sweet pickle relish
1/2 teaspoon Dijon mustard
Salt and pepper to taste
1/4 cup shredded cheddar cheese (optional)
Instructions
Preheat oven to 375°F (190°C).
Cut bell peppers in half lengthwise and remove seeds and membranes.
In a medium bowl, combine drained tuna, mayonnaise, celery, onion, relish, Dijon mustard, salt, and pepper. Mix well.
Spoon the tuna mixture evenly into the bell pepper halves.
Place stuffed peppers in a baking dish.
Bake for 25-30 minutes, or until peppers are tender and tuna mixture is heated through.
If using, sprinkle with cheddar cheese during the last 5 minutes of baking.
Notes
You can use any color bell peppers you like.
For a spicier kick, add a pinch of cayenne pepper to the tuna mixture.
Feel free to add other vegetables like chopped carrots or peas to the tuna salad.
