1 pound ground turkey
2 medium sweet potatoes, peeled and diced
1 small onion, chopped
1 red bell pepper, chopped
1 cup chopped kale
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Add ground turkey to the skillet. Cook, breaking it apart, until fully browned. Drain any excess fat.
Add diced sweet potatoes, onion, and red bell pepper to the skillet with the turkey.
Stir in smoked paprika, garlic powder, salt, and pepper.
Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
Stir in the chopped kale. Cook for another 2-3 minutes until the kale wilts.
Serve immediately.
Notes
For a different flavor, try adding a pinch of cinnamon along with the other spices.
If you prefer softer sweet potatoes, you can microwave the diced potatoes for 3 minutes before adding them to the skillet.
This dish reheats well for leftovers the next day.
