4 cups leftover cooked turkey, shredded or diced
4 cups leftover stuffing
1.5 cups turkey gravy
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
1.5 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat. Add the chopped celery and onion and cook until softened, about 5-7 minutes.
Stir in the flour and cook for 1 minute, stirring constantly.
Gradually whisk in the milk until smooth. Bring to a simmer, stirring, until the sauce thickens.
Stir in the salt, pepper, and 1/2 cup of the cheddar cheese until melted.
Add the shredded turkey and stuffing to the gravy mixture. Stir gently to combine.
Pour the mixture into a greased 9×13 inch baking dish.
Top with the remaining 1/2 cup of cheddar cheese.
Bake for 20-25 minutes, or until heated through and bubbly.
Notes
You can add other leftover vegetables like green beans or corn to the casserole.
For a crispier topping, you can add a layer of crushed crackers or breadcrumbs over the cheese.
