  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1/2 cup cooked rice or noodles (optional)
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, ginger, turmeric, cumin, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes to allow flavors to meld.
  6. Add shredded chicken and cooked rice or noodles (if using). Heat through.
  7. Season with salt to taste.
  8. Ladle soup into bowls and garnish with fresh parsley.
