1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces penne pasta
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cups fresh spinach
Salt and freshly ground black pepper to taste
Instructions
Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add minced garlic and red pepper flakes (if using) to the skillet and cook until fragrant, about 1 minute.
Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
Stir in Parmesan cheese until melted and sauce is smooth.
Add spinach to the skillet and cook until wilted, about 2-3 minutes.
Return the cooked chicken to the skillet. Add the cooked pasta and toss to combine. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
Season with salt and pepper to taste.
Serve immediately.
Notes
For a richer sauce, you can add a tablespoon of butter along with the heavy cream.
Feel free to add other vegetables like sun-dried tomatoes or mushrooms.
Ensure chicken is cooked through before adding to the sauce.
