4 (6 ounce) salmon fillets, skin on or off
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon butter
1 small onion, finely chopped
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
2 cups fresh spinach
1 1/2 cups heavy cream
1/4 cup grated Parmesan cheese
1/2 teaspoon dried Italian herbs
Pinch of red pepper flakes (optional)
Fresh basil for garnish
Instructions
Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Place salmon in the hot skillet, skin-side down if applicable. Cook for 4-5 minutes until skin is crispy and golden.
Flip salmon and cook for another 2-3 minutes. Remove salmon from skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Add chopped onion and cook until softened, about 3 minutes.
Stir in minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until fragrant.
Add fresh spinach to the skillet. Cook until spinach wilts, about 2-3 minutes.
Pour in heavy cream. Bring to a gentle simmer, stirring frequently.
Stir in Parmesan cheese and dried Italian herbs. Add red pepper flakes if using. Cook for 2-3 minutes until sauce thickens slightly.
Return salmon fillets to the skillet, nestling them into the sauce.
Spoon some sauce over the salmon.
Garnish with fresh basil before serving.
Notes
You can serve Tuscan salmon with pasta, rice, or crusty bread to soak up the creamy sauce.
For a lighter version, use half-and-half instead of heavy cream, but the sauce will be thinner.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave.
