Baking soda

Granulated sugar
Brown sugar, packed

Soft caramel candies or soft caramel sauce
Milk chocolate chips or chopped chocolate
Shortening or coconut oil (for melting chocolate)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
Press a small well into the center of each dough ball. Fill the well with a small amount of soft caramel.
Bake for 9 to 11 minutes, or until the edges are lightly golden but the centers are still soft. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cool, melt the milk chocolate chips with a small amount of shortening or coconut oil until smooth.
Drizzle or dip the tops of the cooled cookies with the melted chocolate. Allow the chocolate to set before serving.

For the best caramel texture, use soft, high-quality caramels or make a simple homemade soft caramel.
Chilling the dough for 30 minutes before scooping can help prevent excessive spreading.
