  • 1.5 lbs yellow squash, thinly sliced
  • 1 cup chopped onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the yellow squash and onion in 1/2 cup of butter over medium heat until tender.
  3. In a separate saucepan, melt the remaining 1/2 cup of butter. Whisk in the flour and cook for 1 minute.
  4. Gradually whisk in the milk until smooth. Bring to a simmer and cook until thickened.
  5. Stir in the sour cream, cheddar cheese, salt, and pepper until the cheese is melted and the sauce is smooth.
  6. Add the squash and onion mixture to the cheese sauce and stir to combine.
