1 cup uncooked long-grain white rice
2 cinnamon sticks
4 cups water, divided
1 cup milk (dairy or non-dairy)
1/2 cup granulated sugar, or to taste
1 teaspoon vanilla extract
Pinch of salt
Instructions
Combine uncooked rice and cinnamon sticks in a bowl. Add 2 cups of water. Let it soak for at least 4 hours, or preferably overnight in the refrigerator.
Drain the rice and cinnamon mixture, discarding the cinnamon sticks.
Transfer the soaked rice to a blender. Add the remaining 2 cups of water and blend until the rice is finely ground.
Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher. Press down on the solids to extract as much liquid as possible. Discard the solids.
Stir in the milk, sugar, vanilla extract, and salt. Adjust sugar to your preferred sweetness.
Refrigerate until well chilled. Serve over ice.
Notes
For a smoother texture, you can blend the mixture a second time after straining.
If you prefer a less sweet horchata, reduce the amount of sugar.
You can use almond milk or oat milk for a dairy-free version.
