  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • Food coloring (pink, blue, yellow, green)
  • 1/2 cup rainbow sprinkles
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, beat the cream cheese and sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the flour and salt until just combined.
  5. Divide the batter into four small bowls. Add a different food coloring to each bowl and stir until the color is evenly distributed.
  6. In a separate small bowl, mix graham cracker crumbs and melted butter. Press this mixture evenly into the bottom of the prepared baking pan.
  7. Dollop spoonfuls of each colored batter randomly over the graham cracker crust.
  8. Gently swirl the colors together with a toothpick or skewer, being careful not to overmix.
  9. Sprinkle the rainbow sprinkles over the top of the batter.
  10. Bake for 20-25 minutes, or until the edges are set and the center is almost set.
  11. Let cool completely in the pan on a wire rack.
  12. Once cooled, use the parchment paper overhang to lift the cheesecake out of the pan. Cut into bars.

Notes

  • For sharper color separation, chill the individual colored batters for 15 minutes before dolloping.
  • You can use any cookie crumbs for the crust, like shortbread or vanilla wafers.
  • Store leftover bars in an airtight container in the refrigerator for up to 3 days.
