Whip up these delicious vegan protein muffins. They’re packed with plant-based protein and made with simple ingredients for a perfect high-protein snack.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup vegan protein powder
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes)
  • 1 cup unsweetened non-dairy milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup vegan chocolate chips or berries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the flax egg, non-dairy milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. If using, gently fold in the chocolate chips or berries.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer flavor, you can use almond milk or soy milk.
  • Adjust sweetness by adding more or less sugar to your preference.
  • Ensure your protein powder is suitable for baking.
