Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a separate medium bowl, whisk together the pumpkin puree, granulated sugar, vegetable oil, non-dairy milk, flax egg, and vanilla extract until well combined.
