- 1 tablespoon sesame oil
- 1 pound mixed spring vegetables (asparagus, snap peas, new carrots, broccoli florets)
- 4 scallions, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low sodium soy sauce or tamari
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon cornstarch mixed with 2 tablespoons cold water (slurry)
- 1 teaspoon toasted sesame oil
- 1/4 cup water or vegetable broth
- Optional: Toasted sesame seeds for garnish
- Prepare the sauce: In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, and water or broth. Set aside.
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the harder vegetables (carrots, broccoli) and stir fry for 3 minutes.
- Add the asparagus and snap peas. Continue to stir fry for another 3 minutes until vegetables are crisp-tender.
- Push the vegetables to one side of the wok. Add the minced garlic and grated ginger to the empty space and cook for 30 seconds until fragrant.
- Stir the vegetables and aromatics together.
- Pour the prepared sauce mixture over the vegetables. Bring to a simmer.
- Whisk the cornstarch slurry again and pour it slowly into the simmering sauce, stirring constantly until the sauce thickens slightly.
- Stir in the chopped scallions and the toasted sesame oil. Cook for 1 minute more.
- Remove from heat and serve immediately, optionally topped with sesame seeds.
Notes
- If you prefer a gluten free version, use tamari instead of soy sauce.
- Cut thicker vegetables, like carrots, into thin diagonal pieces so they cook evenly with the other spring vegetables.
- For extra protein, add 1 block of pressed, cubed extra-firm tofu during step 3.
