1 tablespoon chia seeds
1/2 cup unsweetened almond milk (or other plant milk)
1/4 cup full-fat coconut cream (refrigerated overnight)
1 teaspoon maple syrup (adjust to taste)
1/2 teaspoon vanilla extract
1/4 cup fresh or frozen strawberries, chopped
1 tablespoon strawberry jam or puree (optional, for extra flavor)
Instructions
In a jar or container, combine the rolled oats, chia seeds, almond milk, coconut cream, maple syrup, and vanilla extract.
Stir the mixture well until all ingredients are incorporated and the chia seeds are distributed.
Gently fold in the chopped strawberries and the optional strawberry jam.
Seal the container and place it in the refrigerator for at least 6 hours or overnight.
In the morning, check the consistency. If it is too thick, add a splash more almond milk.
Serve cold directly from the refrigerator.
Notes
For a thicker cream layer, scoop only the solid part of the refrigerated coconut cream into the mixture.
