A vibrant and easy vegan vegetable stir-fry featuring a creamy, flavorful peanut sauce. This dish is perfect for a quick weeknight dinner, highlighting fresh vegetables and satisfying taste.

  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup snow peas
  • 1 cup sliced mushrooms
  • 1 cup firm or extra-firm tofu, pressed and cubed
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2-4 tablespoons water, as needed for sauce consistency
  • Optional garnishes: sesame seeds, chopped peanuts, fresh cilantro

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add tofu and stir-fry until golden brown on all sides. Remove tofu from skillet and set aside.
  3. Add broccoli, carrots, and bell peppers to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Add snow peas and mushrooms to the skillet. Stir-fry for another 2-3 minutes.
  5. While vegetables are cooking, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, ginger, and garlic in a small bowl. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  6. Return the tofu to the skillet with the vegetables.
  7. Pour the peanut sauce over the vegetables and tofu. Toss gently to coat everything evenly.
  8. Cook for another 1-2 minutes, allowing the sauce to warm through and thicken slightly.
  9. Serve immediately, garnished with sesame seeds, chopped peanuts, or cilantro if desired.

Notes

  • Feel free to use any mixed vegetables you have on hand, such as zucchini, snap peas, or bok choy.
  • For a spicier sauce, add a pinch of red pepper flakes or a dash of sriracha.
  • Ensure your tofu is well-pressed to achieve a better texture.
