Enjoy these delicious vegetarian black bean enchiladas, a comforting and flavorful meatless meal perfect for any occasion. Tortillas are filled with seasoned black beans and vegetables, then baked in a rich sauce and topped with melted cheese.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup chopped cilantro
  • 8 (6-inch) corn tortillas
  • 2 cups enchilada sauce (red or green)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, avocado, salsa

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute more until fragrant.
  4. Stir in the black beans and corn. Cook for 2-3 minutes, until heated through. Remove from heat and stir in cilantro.
  5. Warm the tortillas slightly to make them pliable (you can microwave them for about 30 seconds, wrapped in a damp paper towel).
  6. Spread about 1/4 cup of enchilada sauce in the bottom of a 9×13 inch baking dish.
  7. Spoon about 1/4 cup of the black bean mixture into each tortilla. Roll up the tortillas and place them seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the enchiladas.
  9. Sprinkle the shredded Monterey Jack and cheddar cheeses evenly over the top.
  10. Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
  11. Let stand for a few minutes before serving. Add your favorite optional toppings.

Notes

  • For a spicier enchilada, add a pinch of cayenne pepper to the bean mixture.
  • If you don’t have enchilada sauce, you can substitute with a mixture of tomato sauce and chili powder.
  • Feel free to add other vegetables like diced bell peppers or zucchini to the filling.
