  • 4 large bell peppers, any color
  • 1 cup cooked quinoa
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional: Shredded cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a medium bowl, combine the cooked quinoa, black beans, corn, chopped onion, cilantro, salsa, chili powder, cumin, salt, and pepper. Mix well.
  4. Spoon the quinoa mixture evenly into the bell peppers.
  5. Place the stuffed peppers in a baking dish. You can add a little water to the bottom of the dish to help steam the peppers.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 10-15 minutes, or until the peppers are tender and the filling is heated through.
  8. If desired, top with shredded cheese during the last few minutes of baking.
  9. Serve warm and enjoy!

Notes

  • You can use any color of bell peppers you prefer.
  • Feel free to add other vegetables like diced zucchini or mushrooms to the filling.
  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce.
