  • 1.5 lbs lean ground turkey
  • 1 cup finely chopped zucchini
  • 1 cup finely chopped bell pepper (any color)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup milk (or unsweetened plant-based milk)
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup ketchup for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the ground turkey, zucchini, bell pepper, onion, carrot, breadcrumbs, milk, egg, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper.
  3. Mix the ingredients gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
  4. Shape the mixture into a loaf on the prepared baking sheet.
  5. If desired, spread ketchup evenly over the top of the meatloaf.
  6. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is cooked through.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.
