1 cup quinoa, rinsed
2 cups vegetable broth
1 tablespoon olive oil
1 bunch kale, stems removed and chopped
1/4 cup dried cranberries
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 tablespoons olive oil (for dressing)
Salt and pepper to taste
Instructions
Cook quinoa: Combine quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.
Sauté kale: While quinoa cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add kale and cook until wilted, about 5-7 minutes.
Make dressing: In a small bowl, whisk together lemon juice, Dijon mustard, and 2 tablespoons of olive oil. Season with salt and pepper.
Combine: In a large bowl, combine the cooked quinoa, sautéed kale, and dried cranberries.
Dress and serve: Pour the dressing over the salad and toss gently to coat. Serve warm.
Notes
Feel free to add toasted nuts like walnuts or pecans for extra crunch.
A pinch of red pepper flakes can add a touch of heat.
For a sweeter dressing, add a teaspoon of honey or maple syrup.
