Make this simple, creamy whipped ricotta dip topped with crunchy pistachios and a drizzle of hot honey for a crowd-pleasing appetizer.

  • 15 ounces whole milk ricotta cheese, drained
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons hot honey (or regular honey with a pinch of red pepper flakes)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Place the drained ricotta cheese, 2 tablespoons of olive oil, minced garlic, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and light.
  3. Transfer the whipped ricotta to a shallow serving bowl.
  4. Spread the ricotta evenly across the bowl using the back of a spoon to create swirls.
  5. Drizzle the top evenly with the hot honey.
  6. Sprinkle the chopped pistachios and fresh parsley over the honey.
  7. Serve immediately with crusty bread or crackers.

Notes

  • Drain the ricotta well before starting; excess liquid makes the dip watery. You can strain it through a fine-mesh sieve lined with cheesecloth for 30 minutes.
  • If you do not have a food processor, you can use a stand mixer with the whisk attachment, beating on high speed for 4 to 5 minutes until light and fluffy.
  • For a savory variation, substitute the hot honey with pesto or sun-dried tomato tapenade.
