2 cups cooked, shredded chicken
8 flour tortillas (medium size)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 (4 ounce) can green chiles, drained
1 cup chicken broth
1 cup sour cream
1 cup Monterey Jack cheese, shredded, divided
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cream cheese, softened
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
In a medium skillet, heat the olive oil over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
Stir in the shredded chicken, green chiles, chicken broth, cumin, salt, and pepper. Cook until the mixture is heated through, about 5 minutes. Remove from heat.
In a separate bowl, whisk together the sour cream, cream cheese, and 1/2 cup of the shredded Monterey Jack cheese until smooth.
Spread about 1/4 cup of the sour cream mixture into the bottom of the prepared baking dish.
Warm the tortillas briefly in the microwave or a dry skillet to make them pliable.
Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up the tortilla tightly and place seam-side down in the baking dish. Repeat with the remaining tortillas.
Pour the remaining sour cream sauce evenly over the rolled enchiladas.
Sprinkle the remaining 1/2 cup of Monterey Jack cheese over the top.
Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
Notes
For a thinner sauce, add a splash more chicken broth when mixing the sour cream base.
You can substitute rotisserie chicken for the cooked shredded chicken to save time.
If you prefer a tangier flavor, use salsa verde instead of green chiles.
