Creamy One-Pot White Chicken Lasagna Soup

Make this hearty, creamy white chicken lasagna soup in one pot for an easy weeknight dinner that tastes like lasagna.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into small pieces
  • 1/2 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the chicken broth and add the diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Add the broken lasagna noodles to the boiling broth. Cook according to the noodle package directions, usually about 8-10 minutes, stirring occasionally to prevent sticking.
  5. Return the cooked chicken to the pot. Reduce the heat to low.
  6. Stir in the heavy cream, ricotta cheese, and Parmesan cheese until the cheeses melt and the soup is creamy. Do not let the soup boil after adding the cream and cheese.
  7. If using, stir in the fresh spinach until wilted.
  8. Stir in the mozzarella cheese just before serving. Serve hot.

Notes

  • For a thicker soup, use 1/2 cup less chicken broth initially.
  • You can substitute rotisserie chicken for the raw chicken to save cooking time.
  • If you prefer a tangier flavor, add 1 tablespoon of lemon juice at the end.
