2 large carrots, shredded
2 medium crisp apples (like Honeycrisp or Fuji), cored and diced
1/2 cup chopped pecans or walnuts
1/4 cup dried cranberries
2 cups mixed greens (optional base)
For the Dressing:
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1/4 cup plain Greek yogurt (for creaminess)
2 tablespoons olive oil
1 teaspoon orange zest
1 teaspoon maple syrup or honey
Salt and black pepper to taste
Instructions
Prepare the dressing: In a small bowl, whisk together the orange juice, lemon juice, Dijon mustard, Greek yogurt, olive oil, orange zest, and maple syrup until smooth. Season with salt and pepper. Set aside.
In a large bowl, combine the shredded carrots, diced apples, chopped nuts, and dried cranberries. If using, place the mixed greens in the bottom of your serving bowl or individual plates.
Pour about half of the dressing over the apple and carrot mixture. Toss gently to coat all ingredients evenly. Add more dressing as needed, reserving some for serving.
Serve the salad immediately, or chill for 15 minutes to allow flavors to meld. Drizzle any remaining dressing over the top before serving.
Notes
For extra crunch, add 1/4 cup of sunflower seeds.
You can make the dressing up to two days ahead and store it in the refrigerator.
If you prefer a thinner dressing, reduce the Greek yogurt to 2 tablespoons and increase the olive oil slightly.
