Make quick, low-carb pizza bites using zucchini slices instead of crust. This recipe is perfect for a healthy snack or appetizer using an air fryer.

Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni (optional)
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your air fryer to 380°F (195°C).
  2. Wash the zucchini and slice them into rounds about 1/4 inch thick.
  3. Lightly brush both sides of the zucchini rounds with olive oil and sprinkle with salt and pepper.
  4. Arrange the zucchini slices in a single layer in the air fryer basket, working in batches if necessary.
  5. Air fry the zucchini for 5 minutes until slightly softened.
  6. Remove the basket and top each zucchini round with about 1 teaspoon of pizza sauce.
  7. Sprinkle the sauce with mozzarella cheese and add a piece of pepperoni, if using.
  8. Return the basket to the air fryer and cook for another 4 to 6 minutes, or until the cheese is melted and bubbly.
  9. Sprinkle with dried oregano before serving hot.

Notes

  • For crispier bites, pat the zucchini slices dry with a paper towel before oiling them.
  • If you do not have an air fryer, you can bake these at 400°F (200°C) for 10 to 12 minutes.
  • Use your favorite low-sugar pizza sauce to keep this recipe keto-friendly.
