These zucchini pizza muffins are a healthy, low-carb, and vegetable-packed snack. They are savory, cheesy muffins that satisfy a pizza craving in a healthier way.

  • 2 cups shredded zucchini, squeezed dry
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup pizza sauce
  • 1/4 cup diced pepperoni (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, combine the shredded zucchini, eggs, almond flour, Parmesan cheese, mozzarella cheese, pizza sauce, pepperoni (if using), oregano, garlic powder, salt, and pepper. Mix until all ingredients are well combined.
  3. Spoon the mixture evenly into the prepared muffin cups, filling each about two-thirds full.
  4. Bake for 20-25 minutes, or until the muffins are golden brown and set.
  5. Remove from the oven and let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
