Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 12-cup muffin tin, or line with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, whisk together the granulated sugar, eggs, vegetable oil, milk, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the grated zucchini.
  6. For the streusel topping, combine the flour and brown sugar in a medium bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Spoon the muffin batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Sprinkle the streusel topping generously over the batter in each cup.
  9. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
