- 1/4 cup chia seeds
- 1 cup milk (dairy or non-dairy like almond or coconut)
- 1 tablespoon sweetener (maple syrup or honey, adjust to taste)
- 1/2 teaspoon vanilla extract
- Combine the chia seeds, milk, sweetener, and vanilla extract in a jar or container.
- Stir the mixture well for about one minute to prevent the seeds from clumping at the bottom.
- Let the mixture sit on the counter for 5 minutes, then stir again thoroughly. This second stir is key for texture.
- Cover the container and refrigerate for at least 4 hours, or preferably overnight.
- In the morning, check the consistency. If it is too thick, stir in a splash more milk until you reach your desired texture.
- Serve cold with your favorite toppings.
Notes
- For a thicker pudding, use a 1:3 ratio of chia seeds to liquid. For a thinner consistency, use a 1:4 ratio.
- To make chocolate chia pudding, add 1 tablespoon of unsweetened cocoa powder with the dry ingredients.
- If you dislike the texture, blend the soaked pudding briefly in a blender for a smoother result.
