  • 1 scoop vanilla or unflavored protein powder
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the protein powder, flour, oats, baking powder, and salt.
  3. In a separate medium bowl, combine the applesauce, Greek yogurt, milk, egg, honey or maple syrup, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. A few lumps are okay.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add a few drops of stevia or a bit more honey/maple syrup.
  • You can add in berries, chocolate chips, or nuts for extra flavor and texture.
  • Ensure your protein powder is finely ground for a smoother batter.
  • Don’t overbake, as this can lead to dry muffins.
