  • 1 tablespoon olive oil (optional, for tossing after coating)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil for easy cleanup, and place a wire cooling rack on top of the foil.
  2. Dry the chicken wings thoroughly. Pat them completely dry using paper towels. Moisture prevents crisping.
  3. In a medium bowl, mix the baking powder, salt, pepper, garlic powder, and cayenne pepper.
  4. Toss the dry chicken wings in the baking powder mixture until every piece is lightly and evenly coated. Do not skip the baking powder; this is the key to crispiness.
  5. Arrange the coated wings on the wire rack in a single layer, ensuring space between each piece for air circulation.
