1 (14 ounce) can sweetened condensed milk
1 1/2 cups granulated sugar
3/4 cup real maple syrup
1 tablespoon unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped walnuts (optional)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
Combine the sweetened condensed milk, sugar, and maple syrup in a medium, heavy-bottomed saucepan.
Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture reaches 234 degrees Fahrenheit (soft-ball stage) on a candy thermometer. This usually takes about 8 to 10 minutes.
Remove the pan from the heat. Stir in the butter, vanilla extract, and salt until the butter melts completely.
If using, stir in the chopped walnuts.
Pour the fudge mixture into the prepared pan. Do not scrape the sides of the pan.
Let the fudge cool completely at room temperature for at least 3 hours, or until firm. Do not refrigerate during this time.
Once firm, use the parchment overhang to lift the fudge from the pan. Cut into 1-inch squares.
Notes
For the smoothest texture, stir the mixture constantly while cooking to prevent scorching.
If you do not have a candy thermometer, cook until the mixture thickens significantly and pulls away from the bottom of the pan when tilted.
Store the finished fudge in an airtight container at room temperature for up to one week.
