  • 1 tablespoon olive oil
  • 1 pound pasta (penne or rotini work well)
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for topping
  • 1/2 cup milk
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the pasta according to package directions until al dente. Drain and set aside.
  3. While pasta cooks, heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Do not let it burn.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Reduce heat to low. Stir in heavy cream, milk, Italian seasoning, salt, and pepper. Cook gently until the sauce begins to thicken slightly, about 3-5 minutes.
  7. Remove the skillet from the heat. Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked chicken and the drained pasta to the skillet. Toss everything together until the pasta and chicken are fully coated in the sauce.
  9. Transfer the mixture to your prepared baking dish.
  10. If using, top evenly with mozzarella cheese.
