Learn how to make soft, fluffy, and authentic homemade naan bread using your skillet. This simple recipe yields restaurant-quality results without needing a tandoor.

Ingredients

  • 1 ½ cups warm water (about 110°F)
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons plain yogurt
  • 2 tablespoons milk
  • 2 tablespoons melted butter or ghee, for brushing

Instructions

  1. Combine warm water, yeast, and sugar in a small bowl. Let it sit for 5-10 minutes until foamy. This shows your yeast is active.
  2. In a large bowl, whisk together the flour and salt.
  3. Add the yogurt and the yeast mixture to the dry ingredients. Mix until a shaggy dough forms.
  4. Turn the dough onto a lightly floured surface. Knead for 5-7 minutes until the dough is smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a clean towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  6. Gently punch down the risen dough. Divide it into 8 equal pieces. Roll each piece into a ball.
  7. Cover the dough balls and let them rest for 10 minutes.
  8. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat until it is very hot. Do not add oil to the pan.
  9. Take one dough ball and roll it out into an oval or teardrop shape, about 1/8 inch thick.
  10. Place one rolled naan onto the hot, dry skillet. Cook for about 1-2 minutes until bubbles form on the surface and the underside is lightly browned.
  11. Flip the naan. Cook the second side for another minute until browned spots appear. If you see large bubbles, gently press them down with a spatula to encourage even cooking.
  12. Remove the cooked naan from the skillet and immediately brush the top with melted butter or ghee.
  13. Repeat with the remaining dough, stacking the cooked naan and covering them with a clean towel to keep them warm and soft.

Notes

  • For Garlic Naan: Mix 2 cloves of minced garlic into the melted butter or ghee before brushing the cooked naan.
  • Using yogurt makes your naan softer. Do not skip it.
  • Make sure your skillet is very hot before placing the dough down for the best puff.
  • If the dough is too sticky to handle, add flour one tablespoon at a time while kneading.
