Make soft, chewy, restaurant-quality naan bread right on your stovetop. This simple recipe requires no special tandoor oven. You can easily adapt this dough for a delicious Garlic Naan variation.

Ingredients

Scale
  • 1 ½ cups warm water (about 110°F)
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 1 teaspoon sugar
  • 3 ½ cups all-purpose flour, plus more for dusting
  • 2 teaspoons salt
  • 2 tablespoons plain yogurt or milk
  • 2 tablespoons melted butter or oil, plus more for brushing

Instructions

  1. Combine the warm water, yeast, and sugar in a large bowl. Let it sit for 5 to 10 minutes until foamy. This shows your yeast is active.
  2. Stir the yogurt and melted butter into the yeast mixture.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the flour mixture to the wet ingredients, mixing until a shaggy dough forms.
  5. Turn the dough onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a damp cloth. Let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
  7. Gently punch down the risen dough. Divide it into 8 equal pieces. Roll each piece into a ball. Let the balls rest for 10 minutes.
  8. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat until very hot. Do not add oil to the pan.
  9. Working with one ball at a time, roll the dough into an oval or teardrop shape, about ⅛ inch thick.
  10. Place one piece of naan dough onto the hot, dry skillet. Cook for 1 to 2 minutes until bubbles appear on the surface.
  11. Flip the naan and cook the other side for another 1 to 2 minutes until golden brown spots appear. If you wish for more charring, briefly hold the cooked side over an open gas flame using tongs.
  12. Remove the cooked naan from the pan. Immediately brush the top generously with melted butter.
  13. Repeat with the remaining dough. Serve your soft naan warm.

Notes

  • For Garlic Naan: Mix 2 cloves of minced garlic with 2 tablespoons of melted butter. Brush this mixture onto the naan immediately after it comes off the skillet instead of plain butter.
  • If your kitchen is cold, place your dough bowl inside a turned-off oven with the light on to create a warm rising spot.
  • If you prefer a chewier texture, reduce the final kneading time slightly.
  • This basic dough can be used for vegan naan by substituting the yogurt with a plant-based alternative or extra water.
