Make your own small batch elderberry syrup using dried berries and honey. This recipe is simple to prepare and suitable for water-bath canning or refrigeration.

1 cup dried elderberries
3 cups water
1/2 cup raw honey
1 tablespoon fresh ginger, sliced (optional)
1 cinnamon stick (optional)
Instructions
Combine the dried elderberries, water, ginger, and cinnamon stick in a saucepan.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45 minutes. The liquid should reduce by about half.
Remove the pan from the heat and let it cool slightly for about 15 minutes.
Strain the mixture through a fine-mesh sieve or cheesecloth into a clean bowl, pressing gently on the solids to extract all the liquid. Discard the solids.
Once the elderberry liquid is warm (not hot), stir in the raw honey until it is completely dissolved. Do not boil the mixture after adding honey.
Pour the finished honey elderberry tonic into clean, sterilized jars for canning or storage.
For refrigeration, seal jars tightly and store in the refrigerator for up to 3 weeks.
For water-bath canning, process filled, sealed jars in a boiling water bath for 10 minutes (adjust time for altitude). Allow jars to cool completely before checking seals. Canned syrup lasts up to 1 year.
Notes
If using fresh elderberries, use 1.5 cups of fresh berries instead of 1 cup dried.
For a kid-friendly flavor, you can add 1/2 teaspoon of vanilla extract after removing from heat, before adding honey.
Dosage Suggestion: Adults take 1 tablespoon daily for maintenance, or up to 3 times daily when feeling unwell. Children over age 1 can take 1 teaspoon daily for maintenance, or up to 3 times daily when feeling unwell.
