Instructions
In a medium bowl, whisk together the almond flour and baking powder.
In a separate small bowl, whisk the eggs, almond milk, melted oil or butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few small lumps are fine. If using sweetener, mix it in now.
Let the batter rest for 5 minutes. This helps the almond flour absorb the liquid, leading to fluffier pancakes.
Heat a non-stick griddle or large skillet over medium heat. Lightly grease with oil or butter.
Pour about 1/4 cup of batter per pancake onto the hot griddle.
Cook for 3 to 4 minutes per side. You know they are ready to flip when bubbles start to appear on the surface and the edges look set.
