  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon Earl Grey tea leaves, finely ground
  • 1/2 cup milk
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a mini muffin tin or line with mini muffin liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and ground Earl Grey tea leaves.
  5. In a small bowl, whisk together the milk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  7. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  8. Bake for 12-15 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  9. Let the cakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cakes are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a teaspoon at a time, if needed to reach your desired drizzling consistency.
  11. Once the cakes are completely cool, drizzle the vanilla glaze over the tops. Allow the glaze to set before serving.

Notes

  • For a stronger Earl Grey flavor, you can steep two Earl Grey tea bags in the milk for 10 minutes, then remove the tea bags before using the milk in the batter.
  • Ensure your Earl Grey tea leaves are finely ground to avoid large pieces in the cake batter. A spice grinder works well for this.
  • These cakes are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
