Make these comforting Creamy Green Chile Chicken Enchilada Casseroles for a quick, satisfying weeknight meal. We use rotisserie chicken for ease and a bright, zesty green chile sauce for big flavor.

Ingredients

Scale
  • 1 pound cooked, shredded chicken (rotisserie works well)
  • 1 (10 ounce) can green enchilada sauce
  • 1 (4 ounce) can diced green chiles, undrained
  • 8 corn tortillas
  • 8 ounces cream cheese, softened
  • 1 cup sour cream (or Greek yogurt for a lighter version)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded Monterey Jack cheese (or Mexican blend)
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, mix the softened cream cheese, sour cream, cumin, garlic powder, salt, and pepper until smooth. This is your creamy base.
  3. In a separate bowl, combine the shredded chicken, green enchilada sauce, diced green chiles, and half of the creamy base mixture. Stir gently to coat the chicken evenly.
  4. Warm the tortillas briefly in a dry skillet or microwave to make them pliable.
  5. Spread a thin layer of the remaining creamy base mixture on the bottom of the prepared baking dish.
  6. Dip each tortilla into the chicken mixture, ensuring both sides are coated. Lay the coated tortillas flat in the baking dish, slightly overlapping them if necessary to cover the bottom.
  7. Pour any remaining chicken mixture over the layer of tortillas.
  8. Sprinkle the Monterey Jack cheese evenly over the top layer.
  9. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  10. Let the enchiladas rest for 5 minutes before slicing and serving. Garnish with fresh cilantro.

Notes

  • For extra zest, add a squeeze of fresh lime juice to the chicken mixture.
  • If you prefer rolled enchiladas instead of a casserole, simply roll the filling inside the tortillas and place them seam-down in the dish, covering with the remaining sauce and cheese.
  • Using rotisserie chicken saves significant prep time for a busy evening.
