Make The Ultimate Creamy Loaded Baked Potato Salad. This recipe combines fluffy baked potatoes with classic toppings like bacon, cheddar, and green onions in a rich, tangy dressing. It is perfect for your next BBQ or potluck.

  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup ranch dressing
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup chopped green onions or chives
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Prick the potatoes several times with a fork. Rub them lightly with olive oil and season with salt and pepper.
  2. Bake the potatoes directly on the oven rack for 50 to 60 minutes, or until tender when squeezed.
  3. Let the potatoes cool until you can handle them. Cut them into bite-sized pieces, about 1 inch. You can remove some of the soft interior if you prefer less potato bulk.
  4. In a large bowl, whisk together the sour cream, mayonnaise, ranch dressing, apple cider vinegar, Dijon mustard, garlic powder, and onion powder until smooth. This is your creamy dressing.
  5. Gently fold the warm potato chunks into the dressing. Work carefully to coat the potatoes without mashing them completely.
  6. Stir in most of the crumbled bacon, cheddar cheese, and green onions. Reserve some for garnish.
  7. If using, fold in the chopped hard-boiled eggs.
  8. Cover the salad and chill in the refrigerator for at least 2 hours to allow the flavors to blend.
  9. Before serving, taste and adjust seasoning. Garnish with the remaining bacon, cheese, and green onions.

Notes

  • Baking the potatoes provides a better texture than boiling for this salad.
  • For make-ahead convenience, you can bake the potatoes and make the dressing up to a day in advance. Combine everything just before chilling.
  • If you skip the ranch dressing, add a splash more vinegar or buttermilk for tang.
