- 2 large eggs, separated
- 2 tablespoons cream cheese, softened
- 1/8 teaspoon cream of tartar
- Pinch of salt
- 4 slices cooked bacon
- 2 large lettuce leaves
- 2 slices tomato
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a clean bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
- In another bowl, mix the egg yolks and softened cream cheese until smooth.
- Gently fold the whipped egg whites into the yolk mixture until just combined.
- Spoon four mounds of the mixture onto the prepared baking sheet, shaping them into rounds.
- Bake for 20-25 minutes, or until lightly golden and firm. Let cool completely.
- To assemble, spread a thin layer of cream cheese on two cloud bread rounds.
- Top with lettuce leaves, cooked bacon, and tomato slices.
- Place the remaining two cloud bread rounds on top to complete your sandwiches.
