A hearty, baked casserole featuring seasonal root and brassica vegetables in a savory, creamy sauce, perfect for cold weather dining.

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb mixed root vegetables (carrots, parsnips, potatoes), peeled and diced
  • 1 head broccoli, cut into florets
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup breadcrumbs
  • 2 tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Add the diced root vegetables and broccoli florets to the skillet. Sauté for 5 minutes.
  4. Pour in the vegetable broth. Bring to a simmer, cover, and cook until vegetables are slightly tender, about 10 minutes.
  5. Stir in the heavy cream, Gruyère cheese, Parmesan cheese, thyme, salt, and pepper. Mix well to coat the vegetables.
  6. Transfer the vegetable mixture to the prepared baking dish.
  7. In a small bowl, combine the breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake for 25 to 30 minutes, or until the topping is golden brown and the sauce is bubbly.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • You can prepare the vegetable mixture up to the baking step a day ahead. Cover and refrigerate, then add topping and bake when ready.
  • For a richer flavor, substitute half the vegetable broth with dry white wine.
  • Use seasonal vegetables like celery root, sweet potatoes, or Brussels sprouts for variation.
