1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup mini marshmallows
1/2 cup graham cracker crumbs
1/2 cup chopped milk chocolate bars (like Hershey’s)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 10-inch cast iron skillet.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in the chocolate chips and mini marshmallows.
Press the cookie dough evenly into the prepared skillet.
Sprinkle the graham cracker crumbs and chopped milk chocolate bars over the top of the dough.
Bake for 25-30 minutes, or until the edges are golden brown and the center is set but still slightly gooey.
Let the skillet cookie cool for at least 10-15 minutes before serving. Serve warm with ice cream or whipped cream if desired.
Notes
For an extra campfire flavor, you can lightly toast the graham cracker crumbs before sprinkling them on top.
If you don’t have a cast iron skillet, you can use a 9-inch round cake pan or an oven-safe skillet.
