  • 4 large hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet relish
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Paprika for garnish (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water by about an inch. Add a generous pinch of salt to the water. Bring to a boil, then reduce heat and simmer until the potatoes are tender when pierced with a fork, about 10-15 minutes. Do not overcook.
  2. Drain the potatoes well and let them cool slightly in a colander.
  3. While the potatoes are cooling, prepare the dressing. In a large bowl, whisk together the mayonnaise, yellow mustard, sweet relish, apple cider vinegar, salt, and black pepper until smooth.
  4. Add the cooled potatoes, chopped hard-boiled eggs, chopped celery, and chopped red onion to the bowl with the dressing.
  5. Gently fold all the ingredients together until the potatoes are evenly coated. Be careful not to mash the potatoes too much.
  6. Taste and adjust seasonings as needed. You may want to add more salt, pepper, or mustard to your liking.
  7. Cover the bowl and refrigerate the potato salad for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  8. Before serving, give the potato salad a gentle stir. Garnish with a sprinkle of paprika and fresh chopped parsley, if desired.
